9 Ways 90 Days Veggie Pasta with Cashew Basil Pesto

Ingredients: Veggies
• 2-3 golden beets
• 2-3 carrots
• 2-3 zucchini
• 1 sweet potato

Ingredients: Cashew Basil Pesto
• ½ cup fresh basil leaves
• 4 oz raw cashews, soaked
• 1/8 cup fresh lemon juice
• 1 tbsp garlic, minced
• 1/4 tsp sea salt
• ½ cup organic extra virgin olive oil

Simple Steps
• Cut the veggies with a spiral slicer or mandolin.
• Place all ingredients for the cashew basil pesto, except olive oil in the food processor.
• Puree.
• Add the olive oil until smooth.
• Toss the veggies with about ½ cup of the pesto and serve.
• Enjoy the taste, the textures and the colors!

    This Recipe sounds wonderful. I am what I refer to as ” loose vegan “. I never eat meat and stay away from dairy and eggs as much as possible. If I am out in public or out at someones home and they serve something with eggs in it or some dairy I will eat it and that’s where the ” loose ” part comes in. But, I never consume meat products.
    By eating a vegetarian, vegan, or raw food diet it can help significantly with your connection to the other side. Not to mention it’s health benefits !!!
